  3. Sauté zucchini: Heat olive oil in a pan over medium heat. Add garlic, zucchini, thyme, salt, and pepper. Cook for 2-3 mins until slightly softened but still bright. Remove from heat and stir in lemon zest.
  4. Assemble tartlets:
