Sweet potato + spice = taco perfection!

*Sweet Potato Tacos*

– 2 large sweet potatoes, peeled and diced

– 1/2 teaspoon cumin

– 1/2 teaspoon chili powder

– 1/4 teaspoon cayenne pepper (optional)

– Salt and pepper to taste

– 8-10 corn tortillas

– Toppings: avocado, salsa, sour cream, cilantro, lime wedges

1. Roast sweet potatoes in the oven with cumin, chili powder, and cayenne pepper until tender.

2. Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

3. Assemble tacos with roasted sweet potatoes, toppings, and a squeeze of lime juice.
