One-Pot Sausage Stew
Ingredients

  • 1 pound sweet Italian sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 medium potatoes, peeled and diced
  • 1 large red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat the oil: Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Cook the sausage: Cook the sausage until browned, about 5-7 minutes. Remove from the pot and set aside.
  3. Cook the onion: Cook the onion until translucent, about 3-4 minutes.
  4. Add the garlic: Cook the garlic for 1 minute, until fragrant.
  5. Add the carrots and potatoes: Cook the carrots and potatoes for 5 minutes, until they start to tenderize.
  6. Add the bell pepper: Cook the bell pepper for 2-3 minutes, until tender.
  7. Add the diced tomatoes and chicken broth: Stir in the diced tomatoes and chicken broth. Bring the mixture to a simmer.
  8. Return the sausage: Return the cooked sausage to the pot. Stir to combine.
  9. Season and simmer: Season with thyme, salt, and pepper. Simmer the stew for 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
  10. Serve: Serve hot, garnished with fresh herbs (if desired).
