One-pot sausage stew

One-Pot Sausage Stew
Ingredients
- 1 pound sweet Italian sausage, sliced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, peeled and diced
- 2 medium potatoes, peeled and diced
- 1 large red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat the oil: Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Cook the sausage: Cook the sausage until browned, about 5-7 minutes. Remove from the pot and set aside.
- Cook the onion: Cook the onion until translucent, about 3-4 minutes.
- Add the garlic: Cook the garlic for 1 minute, until fragrant.
- Add the carrots and potatoes: Cook the carrots and potatoes for 5 minutes, until they start to tenderize.
- Add the bell pepper: Cook the bell pepper for 2-3 minutes, until tender.
- Add the diced tomatoes and chicken broth: Stir in the diced tomatoes and chicken broth. Bring the mixture to a simmer.
- Return the sausage: Return the cooked sausage to the pot. Stir to combine.
- Season and simmer: Season with thyme, salt, and pepper. Simmer the stew for 20-25 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
- Serve: Serve hot, garnished with fresh herbs (if desired).
