One-Pot Italian Chicken
Ingredients

  • 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 2 medium onions, diced
  • 3 cloves garlic, minced
  • 2 medium bell peppers (any color), diced
  • 2 medium zucchinis, diced
  • 1 can (28 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat the oil: Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Cook the chicken: Cook the chicken until browned, about 5-7 minutes. Remove from the pot and set aside.
  3. Cook the onions: Cook the onions until translucent, about 3-4 minutes.
  4. Add the garlic: Cook the garlic for 1 minute, until fragrant.
  5. Add the bell peppers and zucchinis: Cook the bell peppers and zucchinis until tender, about 5 minutes.
  6. Add the crushed tomatoes and chicken broth: Stir in the crushed tomatoes and chicken broth. Bring the mixture to a simmer.
  7. Return the chicken: Return the cooked chicken to the pot. Stir to combine.
  8. Season and simmer: Season with salt, pepper, oregano, and basil. Simmer the mixture for 10-15 minutes, stirring occasionally, until the flavors have melded together.
  9. Serve: Serve hot, topped with grated Parmesan cheese and chopped fresh parsley (if desired).
