One-pot Italian chicken

One-Pot Italian Chicken
Ingredients
- 1 1/2 pounds boneless, skinless chicken breast or thighs, cut into bite-sized pieces
- 2 medium onions, diced
- 3 cloves garlic, minced
- 2 medium bell peppers (any color), diced
- 2 medium zucchinis, diced
- 1 can (28 oz) crushed tomatoes
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat the oil: Heat the olive oil in a large pot or Dutch oven over medium-high heat.
- Cook the chicken: Cook the chicken until browned, about 5-7 minutes. Remove from the pot and set aside.
- Cook the onions: Cook the onions until translucent, about 3-4 minutes.
- Add the garlic: Cook the garlic for 1 minute, until fragrant.
- Add the bell peppers and zucchinis: Cook the bell peppers and zucchinis until tender, about 5 minutes.
- Add the crushed tomatoes and chicken broth: Stir in the crushed tomatoes and chicken broth. Bring the mixture to a simmer.
- Return the chicken: Return the cooked chicken to the pot. Stir to combine.
- Season and simmer: Season with salt, pepper, oregano, and basil. Simmer the mixture for 10-15 minutes, stirring occasionally, until the flavors have melded together.
- Serve: Serve hot, topped with grated Parmesan cheese and chopped fresh parsley (if desired).
