One-Pot Healthy Mexican Beef Mince
Ingredients

  • 1 pound lean beef mince (90% lean or higher)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes, low-sodium
  • 1 cup cooked black beans, low-sodium
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh cilantro, chopped (optional)

Instructions

  1. Heat the oil: Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Cook the onion: Cook the onion until translucent, about 3-4 minutes.
  3. Add the garlic: Cook the garlic for 1 minute, until fragrant.
  4. Add the beef: Cook the beef mince, breaking it up with a spoon, until browned, about 5-7 minutes.
  5. Add the bell pepper: Cook the bell pepper until tender, about 3-4 minutes.
  6. Add the diced tomatoes and spices: Stir in the diced tomatoes, cumin, smoked paprika (if using), salt, black pepper, and cayenne pepper (if using). Bring the mixture to a simmer.
  7. Add the black beans: Stir in the cooked black beans.
  8. Simmer and serve: Simmer the mixture for 10-15 minutes, stirring occasionally, until the flavors have melded together. Serve hot, garnished with chopped fresh cilantro (if desired).
