Gluten-Free Banana Bread
Ingredients
- 3 large ripe bananas, mashed
- 1 1/2 cups gluten-free all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (180°C). Grease a 9×5-inch (23x13cm) loaf pan.
- Prepare the bread mixture: In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, and salt.
- Combine the wet ingredients: In a separate bowl, whisk together the mashed bananas, melted butter, eggs, and vanilla extract.
- Combine the wet and dry ingredients: Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Fold in the nuts (if using): Fold in the chopped nuts, if using.
- Pour the batter: Pour the batter into the prepared loaf pan.
- Bake the bread: Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
- Cool and serve: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
