Gluten-Free Banana Bread
Ingredients

  • 3 large ripe bananas, mashed
  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (180°C). Grease a 9×5-inch (23x13cm) loaf pan.
  2. Prepare the bread mixture: In a large bowl, whisk together the gluten-free flour, granulated sugar, baking powder, and salt.
  3. Combine the wet ingredients: In a separate bowl, whisk together the mashed bananas, melted butter, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients: Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the nuts (if using): Fold in the chopped nuts, if using.
  6. Pour the batter: Pour the batter into the prepared loaf pan.
  7. Bake the bread: Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  8. Cool and serve: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
