Freezer-Friendly Zucchini Slice Recipe
Prep Time: 15 mins | Cook Time: 40-45 mins | Serves: 6-8
Ingredients:
- 3 medium zucchinis (grated, excess moisture squeezed out)
- 1 large onion (finely chopped)
- 1 cup grated cheese (cheddar, feta, or parmesan work well)
- 1 cup self-raising flour (or plain flour + 1 tsp baking powder)
- 5 eggs (lightly beaten)
- ½ cup olive oil (or melted butter)
- 3-4 slices of bacon, diced (optional, or substitute with ham)
- 1 tsp salt + ½ tsp black pepper
- ½ tsp paprika or garlic powder (optional for extra flavor)
Instructions:
- Prep Zucchini: Grate zucchini, sprinkle with a pinch of salt, and let sit for 5 mins. Squeeze out excess water using a clean towel.
- Cook Bacon/Onion (if using): In a pan, cook bacon until crispy, then add onion and sauté until soft. Let cool slightly.
- Mix Batter: In a large bowl, combine eggs, oil, flour, salt, pepper, and spices. Mix well.
- Add Veggies & Cheese: Stir in zucchini, cooked bacon/onion, and cheese.
- Bake: Pour into a greased/lined 20x30cm (8×12″) baking dish and bake at 180°C (350°F) for 40-45 mins until golden and set.
- Cool & Freeze: Let cool completely, then slice into portions. Wrap tightly in plastic wrap or foil, or store in airtight containers.

- Freeze for up to 3 months.
- Reheat: Thaw overnight in the fridge or microwave from frozen (cover with a damp paper towel to prevent drying).
