Continental Slice
Ingredients
For the crust:

  • 1 1/2 cups (190g) all-purpose flour
  • 1/4 cup (55g) confectioners’ sugar
  • 1/4 cup (55g) unsalted butter, chilled and cut into small pieces

For the custard:

  • 1 cup (240ml) milk
  • 1/2 cup (120ml) heavy cream
  • 1/4 cup (60g) granulated sugar
  • 3 large egg yolks
  • 1/2 teaspoon vanilla extract

For the fruit topping:

  • 1 cup (120g) mixed berries (such as strawberries, blueberries, and raspberries)
  • 1 cup (120g) diced peaches or pineapple

For the meringue:

  • 3 large egg whites
  • 1 cup (200g) granulated sugar

Instructions

  1. Make the crust: In a medium bowl, whisk together the flour and confectioners’ sugar. Add the cold butter and use a pastry blender or your fingers to work the butter into the flour until it resembles coarse crumbs. Press the mixture into a 9×13-inch (23×33 cm) baking dish.
  2. Bake the crust: Preheat the oven to 350°F (180°C). Bake the crust for 20-25 minutes, or until lightly golden brown.
  3. Make the custard: In a medium saucepan, combine the milk, heavy cream, and granulated sugar. Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling. In a small bowl, whisk together the egg yolks and vanilla extract. Gradually add the hot milk mixture to the egg yolks, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens.
  4. Assemble the slice: Spread the cooled custard over the baked crust. Top with the mixed berries and diced peaches or pineapple.
  5. Make the meringue: In a clean bowl, beat the egg whites and granulated sugar until stiff peaks form.
  6. Top with meringue: Spread the meringue over the fruit topping.
  7. Bake the meringue: Bake the slice in a preheated oven at 375°F (190°C) for 10-15 minutes, or until the meringue is golden brown.
